INGREDIENTS
Honeyed Fruit Topping:
- 4 Strawberries sliced
- 1 Kiwi sliced
- Handful of blueberries
- ½ Pineapple sliced
- Fresh mint
- ½ Lime juice, freshly squeezed
- 2 Tbsp. Honey
Lime Pancakes:
- Simple Mills Almond Flour Pancake Baking Mix
- 2 Eggs
- 3 Tbsp. milk
- 2 Tbsp. oil
- Handful of white chocolate
- 2 Tsp. zest of lime
- ½ Lime juice, freshly squeezed
INSTRUCTIONS
- Topping: Slice all fruit and place in a jar. Add fresh squeezed lime juice along with honey.
- Shake for a few seconds and chill in refrigerator.
- Pancakes: Whisk eggs, milk, oil, zest of lime in a large bowl. Add simple mills pancake mix while whisking and squeeze fresh lime juice.
- Heat and lightly oil a griddle or skillet on medium heat.
- Pour batter onto griddle using 2Tbsp. batter for each pancake.
- Gently place white chocolate in each pancake.
- Cook until edges are dry, turn and brown other side.
- Repeat with the rest of the batter.

Buttermilk is preferred. These lime pancakes have a deliciously bright & sunny flavor thanks to fresh lime juice and lime zest. They’re extra fluffy with golden edges, and taste delicious with layers of vanilla yogurt. Topped with glazed honeyed fruit. “Garnish your food with mint.”
